Smores Cake ~ Tasty Tuesdays



Happy binary day. Last year I blogged about making Vitamix Pies to get rid of some of my smore materials when smore season had passed. This year I decided to do the same thing but on a larger more smorish scale. Every month at work on the last Friday of the month we do a BBQ/potluck for everyone that had birthdays that month. Last week I made a Smores cake.


I started with 2 spring form cake pans. Someone gave us a bunch of cookie and cake mixes for our wedding so I used a devil food cake cake mix and made 2 rounds. Then I transferred one to a plate a made the same gram cracker crust from the vitamix pies. Then I used this recipe to make a marshmallow frosting using the leftover marshmallows from smore season. I did not like the way that the recipe was organized or how it did not show all of the ingredients.

3 egg whites
1 3/4 cups of sugar
1/8 tsp of salt
1/2 cup of water
16 marshmallows cut up in to halves
16 more marsh mallows cut us in to eighths

Beat the three egg whites until stiff peaks form.


Combine sugar, salt and water and simmer until it forms a syrup. 


Pour syrup in to egg whites and beat to combine. Immediately put batches of the 16 halved marshmallows while beating, wait until last batch is completely dissolved before putting new batch in.


After the pie crust cools put frosting in and spread.


Add half of the marshmallow eighths, add the cake and repeat. 


Frosting.


Marshmallow bits, frosting. 


Torch.

  3. Oh my goodness! You're back! I was going to comment on your most recent post (after I had caught up on all of your happenings!!) but just had to tell you!! These are my new favorite cookies to make, they are to die for, and I think of you every time I make them :-) Try them out with some possible other leftover s'mores stuff!

  4. Cindy, I know {blush} I was away for a while but the wedding took A LOT of work... I was so happy you could come. But now I am back and I have at least 3 posts every week for the rest of the month. So check it out often. Tuesdays thru Thursdays and more as I blog between. I miss your face.   5. Oh you better believe I'll be keeping up with you! I totally understand the wedding taking up time, as well as wanting to surprise people and not show them everything on the blog first :-) Oh, and I brought the cookies into my office and they were gone in about .9 seconds. You guys will love them, whether as bribe or reward (or both!). Love the posts!!
