Long weekends make going back to work more difficult. So I thought I would help myself out a bit today. Because everyone knows that there are two things that will help you get over a case of the Monday's: Margaritas and macaroons. Since I cannot bring margs to work yesterday I whipped up a batch of Macaroons.
1 1/4 cups shredded unsweetened coconut
1 1/4 cups Shredded sweetened coconut
1/3 cup flour
1 teaspoon coconut extract
1 teaspoon vanilla extract
1 dash of salt
Bake for 20 minutes or until golden brown @ 350
